We have created a LAMB PASTRAMI utilizing Te Kuiti farmed free-range lamb that is deliciously rich in flavour and fat. Using the traditional dry-curing method we took various lamb cuts and smoked them with Pohutukawa. We created a natural marinade using organic sea salt, vinegar and hot smoke as a way to preserve the lamb meat. Free of artificial preservatives we got great results. Convenient, ready to heat, ready to eat meat.
